"Voluptuousness is the shortest form of oblivion" is a quote from the Mauritian poet, writer and painter, Malcolm de Chazal, which could well be associated with such a beverage: Chamarel rum.

For it was one of these ancestors, Charles-Antoine de Chazal de Chamarel, who inherited these lands in 1785, located in the south-west of Mauritius, and to which he gave his name.

It is thanks to the micro-climate of this fertile valley, close to the "Terres colorées de Chamarel", that the Rhumerie de Chamarel was able to develop the plantation to the benefit of the growth of sugar cane, next to pineapples and other tropical fruits.

Production and ecology go hand in hand in this distillery, because all the by-products of the transformation are recovered: from the bagasse transformed into energy, the cleaned fumes, the ashes in the fields to the water vapours recovered in the gardens.

What is the secret of the quality of Chamarel's rums?

1. They are produced from sugar cane selected and grown on the estate's plantations;
2. The harvest is done by hand, without burning the crops;
3. The identification of the different harvests and their traceability;
4. The cane is transferred within 4 hours to the Distillery to preserve its freshness and aromas;
5. The work of the master blender whose aim is to select the best batches for white and old rums;
6. The first pressed juice is filtered, then transferred to stainless steel tanks to start the alcoholic fermentation;
7. The selection of yeasts and the control of the parameters;
8. Distillation in a tray column for Premium White Rum or in two copper stills for Double Distilled Rum;
9. The rum is then stored for at least 6 months in stainless steel tanks for a slow and gradual decrease in alcohol content;
10. Aging in cellars.
